Seafood Pilaf
   Servings: 8
 
   Ingredients:
  • 1 1/2 cups long-grained rice
  • 3 lb chicken, cut into serving pieces
  • 3 cups chicken stock
  • 1 lb diced uncooked fish
  • 12 oz frozen cooked shrimp
  • 6 oz frozen or canned lobster meat
  • 10 oz frozen peas
  • 1/3 cup pimiento strips
  • 1 lb artichoke hearts
  • 1/3 cup olive or salad oil
  • 1/2 cup onion rings
  • 1 tomato, diced
  • 2 tbsp salt
  • 1 tbsp paprika
  • 1/4 tsp cayenne
  • 1/2 tsp ground black pepper
  • 1/2 tsp Saffron, crumbled
 
   Preparation:
  • Heat oil in deep saucepan and add chicken and brown it on all sides.
  • Add onions and brown lightly. Add tomato and cook for 2-3 minutes. Stir in rice and mix well.
  • Add chicken stock, salt and spices and mix well. Cover and cook for 10 minutes, stirring frequently.
  • Add fish, shrimp, lobster and peas. Cook covered for 10 minutes or until rice is done.
  • Stir in pimiento and artichoke hearts and cook for 5 minutes and serve hot and at once.
