Saffron Biscuits
   Servings: 24 Biscuits
  • 4 oz butter, melted
  • 4 oz sugar
  • 1 small egg, well beaten
  • 6 oz plain flour
  • 1 tsp baking powder
  • Salt to taste
  • 1/4 tsp saffron, powdered
  • Angelica to decorate
  1. Mix the saffron with a teaspoon of boiling water in a small cup, cover and let it soak for 10-20 minutes.
  2. Preheat the oven to 180C, 350F, and line baking sheets with parchment paper.
  3. Mix the butter and the sugar with saffron infusion in a large mixing bowl until it forms a light paste.
  4. Mix together the flour, salt and baking powder in another bowl.
  5. Add the flour to the butter mixture and mix well.
  6. With floured hands knead the paste until smooth then form into 24 balls. Stick a little piece of angelica into each ball then place them on the prepared baking sheets.
  7. Bake for 25 minutes. Cool on wire racks.
